As a former Texan, I was happy to read your feature on SMU students and alumni choosing organic foods (“Consumers weigh advantages of eating organic,” April 10.) While public health and environmental concerns are sound reasons to opt for organics, animal welfare is also an important factor to consider.
For example, eggs labeled organic can’t come from birds who were confined in restrictive battery cages, which is sadly the norm in conventional egg production.
